Rump and Loin is prepared from a Pistola Cut after removing the Butt. Consists in Rump, Striploin and Tenderloin.

Points requiring specification:

  • Number of ribs.
  • Distance from the eye muscle.
  • Tenderloin removed.
  • Trim standard.
