American Council on Science and Health prepared a recent report on The Role of Beef in the American Diet (Meister et al., 2003). The conclusions of this report showed beef as a highly nutritious food, which contributes important nutrients to the diet, and it can be incorporated into a diet that meets current dietary guidelines for disease prevention. Lean beef fits well in a heart-healthy diet and half of the fat in beef is monounstaurated fat, which does not raise cholesterol levels. Beef also contains Conjugated Linoleic Acid (CLA), an anticarcinogenic associated with certain health benefits.
